At the Downtowner, our meats and vegetables are prepared over a oak-wood burning grill, following ancient Persian cooking traditions. The oak wood imbues our food with a mouth-watering subtle smoke that enhances the flavor of everything from savory boneless leg of lamb to center cut swordfish and sirloin steaks. Working in concert with the grill is our oak-wood burning oven, or tannur. Burning at a 500 degree temperature, the oven cooks our homemade pizzas and flatbread to perfection and makes our artichoke dip an award winning dish (American Dairy Association). Thanks to the visible kitchen, our guests are able to see the cooking process as their meals are fire roasted or oven baked to their satisfaction.

In his writings, the ancient historian Herodotus (ca. 450BCE) describes Persian food as “a model of civilization… and the epitome of alimentary sophistication.” The basis of this praise is rooted not only in the plethora of spices and flavorings the ancient Persians employed in their cuisine, but also in their cooking methods. Ingredients such as saffron and cinnamon were essential in Persian food and earned it the deserved reputation as the “cultural baton of the east.” Through time the innovations of the Persians were passed to new generations and to foreign cultures gaining great renown in the Greco-Roman empire and beyond.
